As it’s the season for jams, jellies, and preserves, here’s an easy no cook recipe from Kilner Jars for Blueberry Chia Seed Jam.
BLUEBERRY CHIA SEED JAM
-1 pint blueberries
-4 tsp stevia
-Juice and zest of 1 lemon
-2 tbsp chia seeds
Place the chia seeds in a large bowl and mix in the stevia and blueberry puree.
Cover and leave in the fridge for 2-3 hours. This will reconstitute the chia seeds so they’re nice and plump.
Place the chia seed mixture in a blender and pulse until slightly smooth.
Sterilize a 0.5l clip top Kilner jar, using the water bath method.
Pour jam into the Kilner jars and seal.
Store the jam in the fridge and use within 4 days.
